Matcha Power Cookies
Ingredients
1 1/2 tsp Aikenka Matcha
1 medium banana
8 Medjool dates
1/2 c chopped walnuts or pecans
1/2 c ground flaxseed
1/2 c pumpkin seeds
3/4 cup dried fruit (raisins, cranberries etc)
3 tbsp hemp hearts
2 tbsp cacao nibs
1 c shredded coconut
Steps
Preheat oven to 300F/150C.
Blend banana and dates in food processor till puréed.
Add in remaining ingredients; adding a drop or two of water if not sticky enough to hold firm.
Roll and press with palm to 1/2 in thick balls onto parchment lined baking sheet.
Bake at 300 F/150C approximately 25 mins until golden around edges.
Keeps well in refrigerator several weeks.
