Hi! Jamie here :)

I'm so glad you've found this community. In my continuous search for high quality organic matcha, I taste test usucha style first.

This is essentially about 2 grams of sifted and whisked matcha in a little hot water (80°C) topped with a little more water. This is the best way to experience a new matcha, especially a single cultivar with unique tasting notes. Once I get a baseline for the flavour, only then do I experiment with adding more water or milk. I do not source matcha for the brand by how it tastes in a latte first. Ceremonial matcha is delicate, because it is produced to be enjoyed plain. I find it funny when some seek the highest quality matcha only to drown it in additives (and are frustrated when the matcha taste is lost.)


I by no means am a purist (who doesn't enjoy a strawberry matcha treat sometimes!) but find a premium grade to be a better option for a drink like this. We are considering adding an organic premium for the latte lovers- stay tuned!

Our go to ratio

how to matcha

It takes some time to crave the taste of matcha on its own. Here is my favourite ratio when I do like to add some milk.

1. Set your kettle to 80°C/175°

(if you don't have a temperature controlled kettle, boil water and let it sit for a few minutes)

2. Sift 3g of matcha powder into a Chawan

3. Pour about 2 oz of water into the bowl (enough to cover the powder)

4. Whisk the matcha until the top layer is a nice foam

5. Pour matcha into cup

5. Add 4 oz of water

6. Add a splash of milk (cold or even better from a frother)

This is a nice place to start, then you can experiment on your own to find your favourite recipe!
